Maple Syrup Cake Recipe
Weather Man Mike Ellis said one of his favorite foods his mom makes is her Maple Syrup cake, that his grandmother created, she was kind enough to share her recipe with us.

MAPLE SYRUP CAKE  (Directions are for both a larger or a smaller cake ().
4 (2) TBSP shortening                                     1 1/2 (3/4) cups flour
1 (1/2) cup sugar                                             2 (1) tsp. baking powder
2 (1) eggs                                                       1/4 tsp. salt
1 (1/2) c. milk added to egg (s) in                      1 (1/2) tsp. vanilla
    a measuring cup
In mixing bowl cream shortening and sugar.  Measure milk and eggs.  Add to first mixture and stir well.
Add dry ingredients. Batter will be thick. Heat 1 cup maple syrup and 1/2 cup water in greased cake pan
until bubbling in 500 degree oven.
Pour batter in center of syrup. Return to oven. Bake 25-30 minutes at 375 degrees.
I use a round pan, cut cake in wedges, turn wedge upside down (with syrupy goo) on top on small plate, and top
with whipped cream.  Good either warm or cold.  The basic cake was created by Ida Ellis, Mike’s grandmother.
It is good served alone.  She topped it with jelly and confectionery sugar. Enjoy!
